I tried to look into learning arpeggios but I honestly have 0 clue what any of these diagrams mean

An arpeggio is just playing chord tones sequentially instead of all at the same time. If you hold down a chord and play each note one at a time then that’s an arpeggio. If you take this one step further you could just play the same notes but like you would play a scale pattern.
For example, the notes in an A minor chord are A, C, E.
The notes in an A minor pentatonic scale are A,C,D,E,G
If you play an A minor pentatonic scale but miss out the D and G then you have an A minor arpeggio.
